2006 Semillon

 

75% Semillon

25% Sauvignon Blanc

pH 3.4 TA 0.54 g/lt

Cases Produced: 70 cases

The Semillon was picked very ripe and fermented in 100% new French Oak barrels, aged on the lees with weekly stirring to extract the flavors from the yeast and blended with 25% Sauvignon Blanc prior to bottling. This process produced a soft and complex white with warm fruit and oak flavors. This Semillon pairs superbly with Mushroom or Chicken Fettucini.
